The Avocado Toast That Actually Earns Its Rent

Hummus underneath, smashed avocado with nutritional yeast and lime on top, crispy marinated tofu on top of that. Breakfast that holds up at dinner.

How to make it

  1. Cube the tofu and leave it in the soy sauce, agave, smoked paprika and crushed garlic.⏱️ 15 min timerPress the tofu first if it came out of the water swimming.
  2. Fry the tofu in a hot pan with a little olive oil, turning it until every side is crisp.⏱️ 8 min timerDo not stir constantly. Crisp needs contact.
  3. Toast the bread until it is rigid enough to carry everything above it.
  4. Mash the avocado with the nutritional yeast, the lime juice, salt and pepper. Keep it chunky.
  5. Spread the hummus on the toast first, then the avocado, then the tofu on top.Hummus first is what stops the bread going soggy.
  6. Black pepper, a thread of olive oil, eat immediately.

Avocado toast got mocked into a punchline because it is usually a slice of bread wearing a fashionable hat: pretty, forty minutes of hunger later. This one has hummus and a whole block of tofu in it, so it stops being a snack and starts being a meal.

The avocados in this one came from the Canary Islands, which is unfair of me, but the recipe survives supermarket avocados too.

The three layers

Hummus does the sticking and the protein. Avocado does the fat and the creaminess, with nutritional yeast for savouriness and lime to keep it from tasting flat. Tofu does the crunch, which is the part everyone forgets and then misses.

Swaps that work

No agave? Maple or a pinch of sugar. No smoked paprika? Sweet paprika plus a drop of liquid smoke, or accept a milder toast. No sourdough? Any bread that does not fold under pressure.
